Simplicity


Lately, I've been a fan of my home-made roasted chicken breast. After cleaning the pieces from the grocery store, I just sprinkle them with salt and pepper. I put them aside in the refrigerator for at least a day for flavor. I then coat each piece with olive oil and put it in my toaster oven at 400 degrees farenheit for 40 minutes. I then lower the heat to about 320 degrees for an additional 10 minutes. I remove it after cooking and let it rest for about 10 minutes. Then, just before eating, I sprinke it with lemon juice.

So far, I have had a very flavorful dish! I tried roasting with herbs before but I find that simple salt, pepper, olive oil and heat are enough. I eat the chicken with steamed vegetables and bread or slice and dice them to include in a salad or sandwich.

Depending on my mood, I always have ranch dressing and hot and spicy sauce on the side for dipping.
